Poached Egg and Salmon on Ciabatta

Ingredients:

  • 1 loaf of Ciabatta
  • 5 eggs
  • 2 large handfuls of spinach
  • Salmon ( 2 pieces per person)
  • Butter
  • 2 tsp Vinegar
  • Salt and Pepper

How to Make:

  1. On recipe for Hard-cooked Egg Sauce ( I couldn’t get hollandaise sauce in time)
  2. Cut the Ciabatta into thick slices and spread butter on it
  3. Bake for 10-15 minutes at 180C in a preheated oven
  4. Wash spinach and put aside
  5. Boil a pan of water (if want to serve this just warm you need to do 3 eggs at the same time – with the help of some other people of course)
  6. Pour 2 tsp vinegar (per pan) after it has boiled.
  7. Crack the egg and gently pour it into the pan
  8. After 4 minutes scoop the egg out and put them into to cold water to stop them cooking further
  9. Immediately serve on top of ciabatta, spinach and salmon
  10. Season with pepper to taste.
