Parmesan Broccoli Fritters with Lemon-Yoghurt


Parmesan Broccoli Fritters 2

Ingredients -Makes 9 -11  small fritters

  • Fritters:
  • 1 small-medium broccoli (225g)
  • 1/2 cup AP flour
  • 1/3 cup Parmesan Cheese
  • Black Pepper
  • 1/2 tsp Salt
  • 1 clove garlic, minced


Yoghurt Sauce:

  • 1/4 cup Plain Yoghurt
  • 1/2 tbsp Lemon juice
  • Pinch of Salt
  • Black Pepper
  • a little lemon zest

 How to Make:

  1. Cut Broccoli into small chunks (the smaller, the faster it cooks).
  2. Boil some water in a saucepan. Add in broccoli to cook for 5-10 minutes (until stalk is soft).
  3. Drain the Broccoli and allow to cool.
  4. Mix the flour, cheese, salt, garlic and pepper together.
  5. Add in cooled broccoli and mash together.
  6. Heat a non-stick frying pan.
  7. Add in oil and pour in small amounts of batter (1 1/2 tbsp). Thicker fritters taste better and are easier to flip!
  8. Allow fritters to brown on each side.
  9. For the Yoghurt Sauce: Mix all the ingredients together and serve with the fritters.
  10. Serve the fritters hot with the sauce!
