I looked over and watched as she reached out to grab a square of chocolate from the opened package lying on the table. I heard the ruffling of the foil wrapper, as I noticed a half-eaten Lindt chocolate bar underneath. I smiled and shook my head slightly. I loved my mum for many reasons—and this was just one of them.
Every time I had a school field trip, my backpack bag would be stuffed full of goodies: granola bars, candy, pretzels, crackers, instant noodles, almost as if I was leaving for good. There would almost always be extra plastic bag, rubber bands, pen, hand sanitizers, bug spray tucked in all the little extra pockets—things that a 14 year old would never think they needed. I would always sulk and complain…but discover later how useful they were.
Every time I needed to work on a school project, she would sit patiently by my side and guide me through the planning and research. She would correct my grammer, spend hours on changing the format and thinking of cool ideas for me. For my Egyptian project in Grade 5, she spent a couple of weekends with me to make my very own Egyptian clay board game for my presentation. I remember going to school feeling very proud it. From the River Nile to Martin Luther King projects—my mum seemed to come up with the most ingenious ideas.
Every time I had a dance performance, athletics event, church talks—I could always count on my mum being there filming, cheering and giving me the biggest hug after. Whether I came first or even last, she made sure I knew that she was proud of me.
Every time I had the flu, stomach bug or even a nightmare, my mum would always be there to rub my tummy or massage my forehead. I would be given the comfiest blankest and pillow. The smell of chinese ointments and oils flooded my senses paralyzing the pain, as the motion of her soft hands calmed my aching body.
If there was one word I could describe my mum: it would be love and selflessness.It didn’t matter where I was, or what I was doing, I could count on my mum. She would know months in advance when I would be flying home from college. I would hear from her through phone calls, facebook messages, skype even about the smallest little things everyday. Whenever she had a break from work, she would call to remind me about something that came to mind just as if I was still living at home.
When Zoe and I were serving 18 months mission away from home, I looked forward to her encouraging words and pictures knowing somebody was thinking of me. Despite my inability to express my love and gratitude, the memories of her love is embedded deep within my memory.My mum is my superhero. Even though she worked from 8Am to 7PM everyday, I never once felt neglected. Sometimes I get strange reactions when people find out my mum has worked full-time since birth, but for me it didn’t matter. My mum was always there for me whether it was through phone calls, FaceTime or by my side. I don’t know how she does it but I never doubted how much she loved me. I can’t imagine all the sleepless nights, all the lunch breaks, all the late night work she had to do just so she could be my me.
If there is anyone I want to be it would be my own mother.
This easy, 30 minute, 1-bowl almond joy scones is dedicated to my amazing, chocolate-loving mother. To the best mum in the world, who has given me everything and almost anything, Happy Mother’s Day!
I love you Mum!
- 2.5 cup Almond Flour
- 3 tbsp Coconut Flour
- 1/2 tsp baking powder
- 1/4 cup desiccated Coconut
- 1/4 tsp salt
- 1/4 cup Applesauce
- 1/4 cup honey/agave
- 1/4 cup chocolate chips
How to Make:
- Preheat oven to 350F.
- Mix together all the dry ingredients – flour, baking powder, coconut and salt.
- Incorporate the applesauce and honey into the dry mixture (it is easier to use hands).
- Add chocolate chips and mix well.
- Divide into 9-10 portions (about 1/4 cup of batter). Shape in a ball and flatten to form a scone.
- Bake for 20 minutes till golden brown.
